Easy Vegan Protein Bars!

After the boom of Veganuary, it seems veganism is the top new diet. Food with feeling, moral and ethics? Count me in. Here is a recipe for a yummy vegan protein snack. Whether you're looking for a quick bite before the gym or just simply peckish, this one is for you.

The ingredients are as follows:

  • 3/4 cup of dates.

  • 1 cup of natural nut butter (almond butter is a favourite).

  • 1/2 cup of flax seed meal.

  • 1/2 cup of unsweetened coconut flakes.

  • 2 teaspoons of vanilla extract.

  • 1/4 cup of coconut oil, melted.

  • 2 tablespoons of maple syrup or honey (to your taste!).

  • 1/2 cup of plant based protein powder (Protein World does a wonderful, nutritious vitamin-packed vegan protein powder, in more than one flavour).

  • 3-6 oz of dark chocolate.

Once that is all sorted, we are onto creating these delicious snacks.

  1. Firstly, put all ingredients, except for the dark chocolate, into a food processor until it is all mixed together.

  2. Then, put the mixture in a square dish. Preferably, an 8x8 pan!

  3. Compress the mixture into the pan very well. It needs to be compact.

  4. Please chill for 30 minutes.

  5. Melt as much dark chocolate as you wish, and pour over the top.

  6. Please refrigerate for another 30 minutes.

  7. Cut into your desired shape!
